Prepare Ahead

This dip can be made a few days in advance, and will improve with flavor the day after it's made. All ingredients can be adjusted to your taste. If mixing by hand without a mixer, the finer you chop your ham and onions, the easier it will be to form the dip. If you are using a mixer, the more course your chopping can be, as it will ultimately break down the more it is whipped in the mixing process. Store in the fridge for up to 5 days.

Ingredients

16 oz Cream Cheese - Full Fat

1/2 lb Salted Cooked Deli Ham- Shaved from the deli or very thinly sliced and roughly chopped- (Unflavored)

5-7 Scallions (Green Onions) - depending on Size and preferred taste (Greens and whites sliced thin)

1 Tbsp Worcestershire Sauce (or to taste)

1/2 tsp Kosher Salt (or to taste)

Directions

  1. Start by beating the cream cheese until smooth, roughly 1-2 minutes.
  2. Add the ham, scallions, Worcestershire sauce, and salt and continue beating the mixture with the cream cheese until well combined. You should still be able to see the bits of ham and green scallions without being completely pulverized into the cheese.  
  3. Taste and adjust the ingredients as needed if you like more sauce, scallions, or salt. The flavor should resemble a slightly salty, umami, and tangy onion flavor, similar to a French onion dip bit with plenty of savory ham flavor. If you accidently add too much of any one ingredient, simply mix in half a block of cream cheese at a time until you reached the desired taste.
  4. The flavor will develop over time, which is best served the following day in a small ramekin or serving bowl with your favorite crackers.
