Ingredients

500g All-Purpose Flour

350g of Hot Water

14g Baking Powder

10g Salt

(Optional substitution of Hot Water for Warm Milk or add 20g of Milk Powder)

4c Neutral cooking oil for frying

Directions

  1. Combine the flour, baking powder, salt and optional milk powder.
  2. Add in water or milk, and combine into a rough dough.  Set aside to rest for about 10 minutes.
  3. Once rested, knead the dough for a few more minutes and set aside for another 10 minutes.
  4. Repeat step three, 4 more times every 10 minutes until the dough is smooth and stretchy.
  5. Divide the dough into 8-10 pieces equal pieces.  About 80 grams our roughly the size of a golf ball.
  6. Flatten the dough balls into discs using your palms or rolling pin.
  7. Fry in a pot or tall skillet with neutral cooking oil heated to about 360F - 380F for 1-2 minutes per side or until golden brown and fluffy..
  8. Serve plain, or with butter, fruits, cinnamon & sugar, or as base for savory dishes.
